Sea cucumber belongs to invertebrate, echinoderma and sea cucumber class. Living on the seabed, mainly diving for food. The main economic species are sea cucumbers in temperate regions, China is a huge market with more than 90% of global sea cucumbers consumption. It shows that sea cucumbers are not only rich in more than 50 nutrients required by human body, such as amino acids, vitamins and chemical elements, but also contain a variety of bioactive substances, such as acidic mucopolysaccharide, saponins and collagen protein, and the pharmacological activities of sea cucumbers are very extensive. Most of China's sea cucumbers are farmed, but all of South Korea's sea cucumbers are wild sea cucumbers. After salting, most of them are exported to China. The protein content of wild dried sea cucumber in Korea is about 55 ~ 60% and the salt content is 10 ~ 15%, which is better than the quality and taste of cultured sea cucumber.
