Chabiant Bayan Shira White Dry Wine is produced by Ismayilli Sharab-2 OJSC in the Ismayilli region of Azerbaijan. It is made from 100% Bayan Shira grapes grown in the producer's own vineyards. The grapes are manually harvested at the end of August. During production, the grape skins remain in contact with the juice for 1 hour before pressing. Fermentation then takes place in stainless steel tanks for 30 days. The wine is aged for 6 months in stainless steel tanks, with weekly bâtonnage on its own yeast lees to improve structure. Tasting Notes: Colour: Medium straw with greenish hints. Aroma: White floral and citrus notes. Taste: Fresh and mineral, with balanced acidity, herbal and lemon notes, and a long aftertaste. Food Pairing: Starters, seafood salads, fish and white meat such as grilled chicken. Serving Temperature: 12–14°C. Awards: Bronze Medal, Decanter World Wine Awards (88 points).
