Our philosophy is based on respect for the land, artisan craftsmanship and the personal care of every vineyard. Throughout the year, we tend the vines by hand and follow their natural development. Harvesting is carried out entirely by hand by members of the family. The bunches are selected directly in the vineyard and transported in small crates to protect the grapes until they reach the winery. ARTISAN WINEMAKING CINO Crianza 2015 is made from Tempranillo, locally known as Tinta del País. The grapes come from the dry-farmed Valdecobos and El Vagón vineyards, with clay-limestone soils and vines between 25 and 47 years old. After a six-day pre-fermentation maceration, traditional pump-overs and manual punch-downs gently extract colour, aroma and structure. Only free-run juice is used. Following natural malolactic fermentation, the wine ages for 13 months in 45% American, 45% French and 10% Spanish and Hungarian oak. It is bottled without filtration and may therefore develop a natural sediment. TASTING AND FOOD PAIRING Deep, clean and bright cherry-red, with indigo highlights and excellent colour intensity. Aromas of blackberry and plum are balanced by toasted notes, spices, caramel, cinnamon, vanilla, coconut and balsamic nuances. The palate is fruit-led and enveloping, with blackberry, blackcurrant and black plum, sweet oak spices, good balance and a long, inviting finish. Ideal with roast lamb, suckling pig, oxtail, beef cheeks, grilled beef, Iberian cured meats and mature sheep's cheese. The original tasting, dated 17 June 2018, indicated a drinking window of 2018-2022, with 2019 as its peak.
