Our philosophy is based on respect for the land, artisan winemaking and the personal care of every vineyard. Throughout the year, our family tends the vineyard by hand and closely follows the natural development of the vines. The 2025 grapes were harvested mechanically from mid-September until the end of the month, allowing the fruit to reach the winery quickly and retain its freshness. ARTISAN WINEMAKING This dry white wine is made from 100% Verdejo grown in the Pago Olmedo vineyard, on gravelly soils rich in calcium and magnesium. The 2025 vintage was rated Very Good on 28 April 2026. Rainfall and warm conditions supported balanced growth, while the marked difference between day and night temperatures in September favoured slow, even ripening and preserved acidity. The grapes are pressed and the must is transferred to a separate tank for alcoholic fermentation at a controlled 16-18 C for eight days. The wine then develops in stainless steel, always protected from oxygen to minimise oxidation and preserve longevity. Natural winter settling is followed by cold filtration. It was bottled in two batches, in March and August 2026. TASTING AND FOOD PAIRING Brilliant straw yellow with abundant green highlights, expressing both youth and the Verdejo variety. The nose is fresh, playful and highly expressive, with green apple, pineapple, mango, lychee and longan, followed by lavender, fennel, hay and freshly cut grass. On the palate it is fruity, fresh and elegant, with well-defined acidity, greater structure than the previous vintage and a harmonious balance between tropical and delicate oriental notes. The finish is long and intense, including on the retronasal passage. Ideal with rice dishes, pasta, vegetables, appetisers, fish and seafood. Serve at 5-9 C. The tasting dated 26 May 2026 recommended enjoying the wine during 2026-2027, while noting its potential to retain strength, stability and balance beyond this period. Store away from sunlight, at a stable temperature, with the bottle lying horizontally.
