Whey Permeate is a convenient dairy substitute product for sweet whey powder, lactose, , and/or demineralized whey powder in many food applications. It is concentrated by reverse osmosis and single-stage vacuum evaporator followed by spray drying and packaging. It has a high wettability and good fluidity making it ideal for instant soups, sauces, powder beverages, and seasoning. As a source of lactose, it also has a sweet dairy flavor for which it is used in chocolate, bakery and confectionary.
